All of the Lean Cuisines and NutriSystem meals are getting really old (like, ancient), and so I splurged last night and made one of my favorite snack foods. I call it White Christmas Chex Mix (my mom used to make it around Christmastime), but it's also known as Muddy Buddies and Doggie Chow. The recipe for it is on the back of your favorite Chex cereal box. I use the Rice Chex in mine. My family loves it (David especially, can you tell?), and it's really easy and quick to make. Here's the recipe...enjoy!
9 c. favorite Chex brand cereal
1 c. chocolate chips
1/2 c. peanut butter
1/4 c. butter (1/2 stick)
1 tsp. vanilla
1 1/2 c. powdered sugar (or more...hee hee)
Place cereal in large bowl and set aside. In a small saucepan over low heat, melt chocolate chips, peanut butter, and butter until smooth, stirring often. Remove from heat, and stir in vanilla. Pour over cereal. Mix. Place cereal and sugar in bag and shake until coated. Store in airtight container.
